Been a busy week pretty much spending all my time at the library. My daily schedule follows a eat.sleep.library routine. This routine has gotten more boring and tiring each and everyday. A few nights ago me and my friend aislinn had enough and decided to study at home. By study at home i really meant make cupcakes!!
I adapted Anna olson's tangerine cupcake recipe and made clementine cupcakes!! The cake itself is not too sweet and was almost like a muffin with very sweet icing. I would definitely make these again!

Christmas Spirit
Since i'm in the middle exams there hasn't been much christmas spirit in my life. I decided that some holiday baking may help. One of my favourite christmas cookies is the traditional shortbread cookie!

Pizza!
Ani and I decided to tackle this recipe it was pretty simple but took a while to bake - bad oven (and set off the fire alarm a few times....)
Recipe:
-2 cups unbleached all-purpose flour
-3/4 teaspoon salt
-2 teaspoons sugar
-1 package of quick yeast
-3/4 cup warm water
Preheat oven to 450. In bowl mix 1 cup of flour with salt, sugar and yeast. Add the warm water. Mix in 3/4 cup of flour and form a ball. Let dough rise for 5 minutes (or longer if desired). Roll out dough and add in last 1/4 cup of flour as needed. Place on oiled pan and add toppings as desired (We added red peppers, chicken and onions) Place in oven untill crust is slightly browned and cheese is bubbling.

Cannolis!
I came home this weekend to a kilogram of ricotta cheese sitting on the counter and a package of shells. I knew as soon as I saw them it was assumed i was making My dad's favorite - cannolis! They turned out very well and i would love to tackle a homemade shell recipe at some point.
Recipe for my riccotta creme filling:
-1 kg ricotta cheese
-3 cups of icing sugar
-grated lemon zest
-grated chocolate
-pinch of cinnamon
-dash of vanilla
Mix all ingredients, pipe inside shells and enjoy!
(i also like to grate chocolate on top for an extra touch )

Lemon Meringue Pie
Recently my friend, Anishta and I decided to tackle this seemingly difficult dessert but it was surprisingly easy and very delicious (and oh so pretty!)
We followed Anna Olson's (my mom / sisters favourite baker) Recipe off of the food network found here. I wanted to try this recipe because the crust contains no lard/shortening which was much healthier than most pie crust recipes!
